    About this recipe: This combination of prawns, bacon, avocado, cheese and lettuce makes a great main in summer or a substantial entree any time of year.

    Serves: 8 

    • 448 g uncooked penne pasta
    • 115 g bacon
    • 455 g cooked shrimp, peeled and deveined
    • 2 avocados - peeled, pitted and diced
    • 140 g shredded Cheddar cheese
    • 235 ml mayonnaise
    • 60 ml lemon juice
    • 40 g tomatoes, diced
    • 2 g crushed red pepper
    • 220 g shredded lettuce

    1. Bring a large pot of lightly salted water to a boil. Place pasta in the pot, cook for 8 to 10 minutes, until al dente, and drain. Let cool.
    2. Place bacon in a frypan over medium high heat and cook until evenly brown. Drain and crumble. Spread the lettuce in the bottom of a serving bowl.
    3. In a separate bowl, gently toss together the pasta, bacon, prawns, avocados, cheese, mayonnaise, lemon juice, tomatoes and chilli. Spoon this over the lettuce and serve.
