    About this recipe: A yummy, melt-in-your mouth, cinnamon spiced spin on the traditional Scottish shortbread.

    Serves: 16 

    • 155 g all-purpose flour
    • 40 g brown sugar
    • 10 g white sugar
    • 1 g ground cinnamon
    • 115 g butter

    1. Preheat the oven to 160 C.
    2. In a medium bowl, stir together the flour, brown sugar, white sugar and cinnamon. Cut or rub in the butter until the mixture is like fine crumbs.
    3. Pack the crumbs into a ball, then knead by hand until smooth.
    4. On a lightly floured surface, roll the dough out into an 20cm circle. Place the circle on a baking sheet, and slice into 16 wedges. Leave the circle intact.
    5. Bake in preheated oven for 25 minutes or until the center has set. Cut the circle into wedges again while it is still warm and transfer to a wire rack to cool.
