Queen's Biscuits (Biscotti di Regina)

About this recipe: These are great little Italian sesame biscuits. It's not too sweet and great with coffee.


Serves: 15 

  • 2 cups (250g) plain flour
  • ½ cup (110g) white sugar
  • 1½ teaspoons baking powder
  • pinch salt
  • 1/4 teaspoon ground cardamom
  • 125g butter, softened
  • 1 egg, lightly beaten
  • 1/2 teaspoon lemon essence (or vanilla essence)
  • 1/4 cup (65ml) milk
  • 1/3 cup (40g) sesame seeds

  1. Preheat oven to 190 degrees C. Grease a baking sheet or tray.
  2. Sift together flour, sugar, baking powder, salt and cardamom in a large bowl. Rub in the butter in till the mixture resembles breadcrumbs.
  3. Stir in the egg, lightly beaten, and add the lemon or vanilla essence. Stir in the milk one tablespoon at a time, mixing after each addition.
  4. Mix everything together thoroughly. Break dough off in small pieces and roll in the hands to rolls about 3cms long. Flatten slightly and roll in sesame seeds.
  5. Place on baking sheet about 2cm apart. Bake for 12-15 minutes or until lightly browned.
