Simple Sponge Cake

    This is a simple sponge cake that can be made in no time at all with only three ingredients and no butter. What have you got to lose?

    Serves: 4 

    • 3 eggs
    • 125g (1/2 cup) caster sugar
    • 90g (3/4 cup) self-raising flour

    Prep:5min  ›  Cook:20min  ›  Ready in:25min 

    1. Preheat the oven to 190 C. Grease a 20 or 23 cm round cake pan.
    2. In a medium bowl, whip together the eggs and caster sugar until light and creamy in colour. Fold in flour. Pour into the prepared pan.
    3. Bakein preheated oven for 20 minutes or until the top of the cake springs back when lightly pressed. Cool in the tin over a wire rack.

    i just made this but poured it into 16 cake cases instead! i made 4 with a pineapple chunk baked to the bottom, 4 with a blob of jam in the middle (like a donut), 4 with vanilla essence and the last 4 with lemon juice.. i made them for a friends little boy who is dairy intolerant but i had to stop myself from eating them all (had one of each to test them lol) brilliant recipe will defo use again.. and again!!  -  06 Aug 2011  (Review from Allrecipes UK | Ireland)

    It was so good to find a recipe that used only three ingredients that were all practically necessities in your pantry. This recipe was unbelievably easy and tasted great!
