    About this recipe: This is a simple sponge cake that can be made in no time at all with only three ingredients and no butter. What have you got to lose?

    Serves: 4 

    • 3 eggs
    • 125g (1/2 cup) caster sugar
    • 90g (3/4 cup) self-raising flour

    1. Preheat the oven to 190 C. Grease a 20 or 23 cm round cake pan.
    2. In a medium bowl, whip together the eggs and caster sugar until light and creamy in colour. Fold in flour. Pour into the prepared pan.
    3. Bakein preheated oven for 20 minutes or until the top of the cake springs back when lightly pressed. Cool in the tin over a wire rack.
