About this recipe: Crisp macaroons and walnut butter biscuits make tempting nutty nibbles.

Serves: 24 

  • 170 g plain flour
  • 1/4 teaspoon salt
  • 125 g butter, at room temperature, cut into small pieces
  • 110 g sugar
  • 2 teaspoons instant coffee powder or granules
  • 30 g chopped walnuts

  1. Preheat the oven to 160°C. Sift the flour and salt into a bowl and add the butter. Reserve 1 tablespoon of the sugar and add the rest to the bowl with the coffee.
  2. Rub all the ingredients together until the mixture resembles large breadcrumbs, then mould into small balls about the size of a walnut. Roll each ball in the chopped walnuts.
  3. Space the balls well apart on lightly greased baking trays and flatten them with the bottom of a glass tumbler dipped in the reserved sugar.
  4. Bake in the oven for 20–30 minutes, or until the edges are lightly browned. Leave the biscuits to cool a little before lifting onto a wire rack to cool completely. Store in an airtight container.
  5. The biscuits look most attractive if you arrange them on a plate and sift a little icing sugar over them just before serving.
