Spinach Fettuccine with Broccoli and Ham

About this recipe: The sour cream in this recipe tastes tastes great with the ham and broccoli.


Serves: 4 

  • 375g spinach or tricolour fettuccine pasta
  • 1 tablespoon (15ml) olive oil
  • 1 small onion, peeled and chopped
  • 375g chopped cooked smoked ham
  • 500g broccoli florets, blanched
  • 1/2 cup (125ml) sour cream
  • salt and pepper to taste

  1. Bring a large saucepan of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente. Drain, and return to pot.
  2. Heat oil in a large heavy frypan over medium heat. Fry onion until soft and transparent.
  3. Stir in ham and heat through. Mix onion, ham and broccoli with pasta in pan. Mix in sour cream until evenly coated.
