    About this recipe: This is a wonderfully simple, yet delicious cake. It is so moist and fresh, it will surely be a favourite with your family, just like it is with mine! Most of the preparation time is taken up in peeling and cutting the apples. A mixture of apples works great, although I usually use Golden Delicious.

    Serves: 12 

    • 5 apples, peeled and cored
    • 3 eggs
    • 1½ cups caster sugar
    • ¾ cup (180ml) vegetable oil
    • 1 teaspoon bicarbonate of soda
    • 1 teaspoon ground cinnamon
    • 1 teaspoon (5ml) vanilla essence
    • 2 cups (250g) plain flour
    • 3/4 cup chopped walnuts

    1. Preheat oven to 175 degrees C. Grease and flour a 23x33cm cake tin. Cut the apples into 2.5cm wedges. Set aside.
    2. In a large bowl, whisk together the eggs and sugar until blended. Mix in the oil, baking soda, cinnamon and vanilla. Stir in the flour just until incorporated then fold in the apples and walnuts.
    3. Pour batter into prepared tin and bake for 55 minutes, or until a toothpick inserted into the centre of the cake comes out clean. Allow to cool slightly. Serve warm or at room temperature.
