    About this recipe: Homemade cordial using fresh fruit makes wholesome and inexpensive drinks for children and, with a measure of gin or vodka added, is also delicious for grown-ups!

    Ingredients
    Serves: 8 

    • LEMON CORDIAL
    • 2 cups white sugar
    • 1½ cups water
    • 2 cups fresh lemon juice
    • 3 teaspoons citric acid
    • Iced water or soda water, to serve
    • LEMON & PASSIONFRUIT CORDIAL
    • 2 cups white sugar
    • 1½ cups water
    • 1 cup fresh lemon juice
    • 3 teaspoons citric acid
    • 12 passionfruit, pulped

    1. LEMON CORDIAL
      Place the sugar, water and lemon juice in a medium saucepan. Cook, stirring every now and then, over high heat until the sugar dissolves and the syrup comes to the boil.
    2. Reduce the heat to medium-low and simmer for 20 minutes, or until the syrup thickens slightly. Stir in the citric acid. Strain the cordial into a sterilised bottle. The cordial will keep, refrigerated, for up to one month.
    3. To serve, pour the lemon syrup into glasses, top with iced water or soda water, stir well and serve immediately.
    4. LEMON & PASSIONFRUIT CORDIAL
      Make as for lemon cordial, but pour the hot lemon syrup over the passionfruit pulp and allow to stand for 30 minutes to cool. Strain the cordial into a sterilised bottle. The cordial will keep, refrigerated, for up to one month.
    5. Pour the cordial into glasses, top with iced water or soda water, stir and serve at once.
