About this recipe:Not just a plain old grilled cheese sandwich but it's also filled with sauteed onions and mushrooms, cheese then dipped in egg batter before cooking. Scrumptious!
FOR THE SANDWICHES
20 g butter
1/2 cup chopped fresh mushrooms
1/4 cup chopped onion
Pinch of black pepper
8 slices white sandwich bread
90 g Swiss or Cheddar cheese, sliced
90 g mozzarella cheese, sliced
Extra butter, for frying
FOR THE EGG COATING
3 tablespoons milk
1/2 teaspoon salt

To prepare the sandwiches, melt the butter over medium heat in a medium frying pan. Add the mushrooms, onion and pepper and cook until the vegetables are tender, about 5 minutes. Remove from the pan.
For each sandwich, layer a slice of bread, a slice of Swiss or Cheddar cheese, some of the mushroom-onion mixture, a slice of mozzarella cheese and another slice of bread.
To prepare the egg coating, whisk the eggs, milk and salt together in a shallow bowl. Dip the sandwiches in the egg mixture to coat on both sides.
Wipe out the frying pan; melt a little more butter in it and swirl to cover the base. Add two sandwiches and brown on one side over medium heat, 3 to 5 minutes. Add a little more butter and turn the sandwiches over to brown the second side. Keep warm while you cook the remaining two sandwiches in the same way.
