Cucumber Sandwich

    I worked at a sandwich shop that made these vegetable sandwiches stuffed with cucumbers, sprouts, tomatoes, and avocadoes. They were a veggie's dream!

    Serves: 1 

    • 2 thick slices whole wheat or wholemeal bread
    • 2 tablespoons cream cheese, softened
    • 6 slices cucumber
    • 2 tablespoons alfalfa sprouts
    • 1 teaspoon (5ml) olive oil
    • 1 teaspoon (5ml) red wine vinegar
    • 1 tomato, sliced
    • 1 leaf lettuce
    • 30g pickled cucumbers, sliced
    • 1/2 avocado, mashed

    1. Spread each slice of bread with 1 tablespoon cream cheese.
    2. On one slice of bread, arrange cucumber slices in a single layer. Cover with sprouts, then sprinkle with oil and vinegar. Layer tomato slices, lettuce, and pickled cucumbers.
    3. Spread other slice of bread with mashed avocado. Close sandwich and serve immediately.

    A great summertime sandwich! One of my favorites. I used pita bread, my husband prefers tortilla wraps. Pita bread can be a little messy but delicious. I also use low-fat cream cheese and just a couple slices of avocados. Two whole avodacos would be way too much (must be a misprint.) Note to Eggyplant: a pepperoncini is a mild yellow pepper, also referred to as Banana Peppers. They are usually sold in jars near the pickle section.     Fabulous! I toasted some whole grain bread before assembling the sandwich. I used light cream cheese and added a little salt and pepper. This would easily make a nice wrap sandwich. I would definitely make this again!  -  16 Aug 2010  (Review from Allrecipes US | Canada)
