Irish Potato Cake

    This is an old potato cake recipe of my grandmother's. Good served with fruit.

    Serves: 12 

    • 150g butter
    • 2 cups castor sugar
    • 2 eggs
    • 3/4 cup (180ml) milk
    • 2 cups plain flour
    • 2 teaspoons baking powder
    • 1/8 teaspoon salt
    • 2 teaspoons ground cinnamon
    • 2 teaspoons ground cloves
    • 2 teaspoons ground nutmeg
    • 2 cups cooked, mashed potatoes
    • 1 cup chopped walnuts
    • 1 cup raisins

    1. Preheat oven to 160 C. Grease and flour a 25cm Tube or Bundt pan.
    2. Sift together the flour, baking powder, salt, cinnamon, cloves and nutmeg. Set aside.
    3. In a large bowl, cream together the shortening and sugar until light and fluffy. Beat in the eggs one at a time. Add the flour mixture alternately with the potatoes and milk. Stir in nuts and raisins.
    4. Pour into the prepared Bundt pan. Bake in the preheated oven for 90 to 120 minutes, or until a fine skewer inserted into the cake comes out clean.

    I made this for a St. Patricks day family party. Everyone loved it. They all want the recipe (which i may keep to myself) and they said this I will have to bring each time we get together.
