About this recipe: Spicy potatoes, tomatoes and onions with an Indian kick! This is super spicy so be aware!

Serves: 4 

  • 1 onion, peeled and chopped
  • 3 tablespoons (45ml) vegetable oil
  • 500g potatoes, peeled and cubed
  • 1 teaspoon salt
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon ground cumin
  • 2 tomatoes, chopped

  1. Lightly brown onion in oil in a medium size heavy based frying pan.
  2. Stir in salt, cayenne, turmeric and cumin. Add potatoes and cook for 10 minutes stirring occasionally.
  3. Add tomatoes, cover pan and cook until potatoes are soft, about 10 minutes.
