About this recipe:A delicious low-fat muffin. Children love them, and it's a great way to get them eating wholemeal. If desired, add sultanas or some chopped nuts.
240 g whole wheat flour
15 g baking powder
3 g salt
2 g ground cinnamon
180 ml nonfat milk
2 egg whites
60 ml vegetable oil
60 ml honey
125 g chopped apples

Preheat oven to 190 C. Lightly grease one 12-cup muffin tin, or line with paper muffin cups.
Lightly beat egg whites.
In a separate bowl, mix dry ingredients thoroughly.
In a separate bowl, mix together milk, oil, honey and apples. Gently fold in egg whites to the wet mixture. Add the wet mixture to the dry ingredients. Fold together until just moistened. Batter will be lumpy.
Fill greased muffin tins two-thirds full. Bake about 20 minutes until lightly browned.
