    About this recipe: This is a very simple and hearty soup with plenty of flavour. It tastes even better the next day! Serve it garnished with sour cream and shredded cheddar cheese. Substitute with minced chicken if minced turkey is unavailable.

    Ingredients
    Serves: 8 

    • 1 1/2 teaspoons olive oil
    • 500g minced turkey
    • 1 onion,peeled and chopped
    • 500ml (2 cups) water
    • 1 can crushed tomatoes
    • 1 can kidney beans, drained, rinsed and mashed
    • 3 cloves garlic, crushed
    • 3 teaspoons mild chilli powder or to taste
    • 1/2 teaspoon paprika
    • 1/2 teaspoon dried oregano
    • 1/2 teaspoon ground cayenne pepper
    • 1/2 teaspoon ground cumin
    • 1/2 teaspoon salt
    • 1/2 teaspoon ground black pepper

    1. Heat the oil in a large saucepan over medium heat. Place turkey in the pot, stir and cook until evenly brown. Stir in onion, and cook until transparent
    2. Pour in the water. Mix in crushed tomatoes, kidney beans and garlic. Season with chilli powder, paprika, oregano, cayenne pepper, cumin, salt and pepper. Bring to the boil. Reduce heat to low, cover, and simmer 30 minutes.
