Irresistible Irish Soda Bread

    A very easy bread. Best if made the day before, or several hours before serving. If you can't find buttermilk, combine 2 tablespoons lemon juice with enough milk to make up 480 ml of liquid in a measuring cup.

    Serves: 12 

    • 375g plain flour
    • 1 tablespoon baking powder
    • 1 teaspoon baking soda
    • 1 teaspoon salt
    • 65g sugar
    • 1 egg, lightly beaten
    • 480ml buttermilk
    • 60g butter, melted

    1. Preheat oven to 160 degrees C. Grease a 12x23cm loaf tin.
    2. Combine flour, baking powder, baking soda, salt and sugar in a large bowl. Blend egg and buttermilk together in a separate bowl, and add all at once to the flour mixture. Mix just until moistened. Stir in butter. Pour batter into loaf tin.
    3. Bake for about 1 hour, or until a skewer inserted into the centre comes out clean. Cool on a rack. Wrap in a clean kitchen towel for several hours, or overnight, for best flavour.

    This is our favorite Soda Bread. The only tip I can offer is that chemically leavened breads should sit out at room temp for 30 minutes or so in the loaf pan following the mixing to allow the soda and powder to do their jobs.     Having never made soda bread before, I was confused as to which recipe might be "the best." I tried this recipe as well as "Amazingly easy Irish soda bread" (submitted by Megan). I liked this bread, but my husband thought it was really plain and boring. However, I LOVED the "Amazingly Easy Irish Soda Bread" recipe. So, while "Irresistible Irish Soda Bread" was VERY EASY and quite good, the "Amazingly Easy" version produces a bread with a tender, flaky crust and a slightly sweeter bread.  -  17 Mar 2002  (Review from Allrecipes US | Canada)
