Mocha Muffins

    These muffins taste indulgent, almost like a cupcake, but are low in fat. If you want more chocolate, you might try adding chocolate chips.

    Serves: 12 

    • 1 egg
    • 2 egg whites
    • 120ml milk
    • 1 tablespoon instant coffee
    • 1 tablespoon water
    • 2 teaspoons vanilla essence
    • 190g plain flour
    • 110g malted milk powder eg. Horlicks
    • 100g caster sugar
    • 2 teaspoons baking powder
    • 1/2 teaspoon salt
    • 1/2 teaspoon ground cinnamon
    • 25g caster sugar

    1. Preheat oven to 200 C.. Lightly grease muffin tin or line with paper cases.
    2. Mix together egg, egg whites and milk. Stir in coffee, water and vanilla.
    3. In a large bowl, mix together flour, malted milk powder, 100g sugar, baking powder and salt. Stir in liquid mixture. Mix together really well, until batter is thin and gooey like cake batter. Fill muffin cups 2/3 full. In a small bowl, stir together cinnamon and remaining sugar. Sprinkle cinnamon sugar over muffins.
    4. Bake for 20 to 25 minutes.

    I wasn't sure why these were called Mocha Muffins if they didn't contain any chocolate. Anyway, I didn't have any malted milk powder, so I substituted cocoa powder. I added 1/2 cup oil at the suggestion of the other reviewers. When I tasted the batter, it didn't seem sweet enough, so I added a little cinnamon to the batter. The second time I made them, I cut the cocoa powder to 1/3 cup and used my own mixture of chai spices instead of cinnamon.
