Easy Portuguese Biscuits

About this recipe: This crisp sugary biscuit is a family recipe from the island of St Michael in the Azores. So simple, and nice to have on hand to go with coffee or tea.

  • 2 tablespoons cornflour
  • 220g caster sugar
  • 60g butter
  • 2 eggs
  • 345g plain flour
  • 2 teaspoons baking powder

  1. Preheat the oven to 160 degrees C.
  2. In a medium bowl, stir together the cornflour and sugar. Add the butter and cream well. Add eggs, one at a time, mixing well after each addition. Combine the flour and baking powder; stir into the sugar mixture until a dough forms. On a lightly floured surface, roll the dough out to ½ cm thickness and cut into desired shapes with biscuit cutters. Place biscuits 2.5cm apart onto a dry baking tray.
  3. Bake for 8 to 10 minutes in preheated oven, until biscuits are golden brown at the edges. Allow biscuits to cool on baking tray for 5 minutes before removing to a wire rack to cool completely.
