Watermelon Salsa

About this recipe: A simple sweet and spicy salsa made with watermelon, chilli, onion and balsamic vinegar. Serve with plain tortilla chips.

Ingredients

Serves: 16 

  • 1/2 large watermelon, seeds removed and coarsely chopped
  • 1/2 red onion, chopped
  • 1 red chilli, seeds removed and chopped
  • handful chopped coriander leaves
  • 2 tablespoons balsamic vinegar
  • 1/4 teaspoon salt

  1. In a serving bowl, mix together all ingredients. Cover and refrigerate for at least 1 hour to meld flavours.
