Citrus Salad

    Fresh fruit and lettuce make for a fast and easy salad perfect for a light lunch or side dish.

    Serves: 4 

    • Finely grated rind of 1 lime, peeled, pith removed and sliced
    • 2 tablespoons freshly squeezed orange juice
    • 2 mandarin oranges, peeled and sectioned
    • 1 tablespoon freshly squeezed lemon juice
    • Finely grated rind of 1 orange, peeled and sectioned
    • 3 tablespoons olive oil
    • 1 grapefruit, peeled and sectioned
    • 200g mixed salad greens
    • 1 shallot, peeled and diced
    • 1 grapefruit, peeled and cut into bite size pieces
    • 1 tablespoon lemon juice
    • 1 pinch black pepper to taste
    • 1 tablespoon olive oil
    • 1/2 teaspoon salt
    • 1 head romaine lettuce, well rinsed and torn into pieces

    1. In a bowl, mix the lime rind, orange rind, shallot, lemon juice, olive oil and salt. Add the fruit and toss well. Arrange dressed fruit atop cos lettuce to serve.
    2. To prepare the dressing combine the juices in a bowl and slowly whisk in the olive oil in a thin stream.
    3. In a serving bowl toss the greens and the grapefruit with the dressing and sprinkle with freshly ground black pepper, to taste.

    This was nice and tasted light. I imagine the taste will depend greatly on the quality of the citris. Also freshly ground black pepper is good.     Easy and excellent I used chopped iceberg lettuce... For an extra taste garnish with a few shrimp or a little flaked cooked whitefish marinated in some lime juice... And/or add a handful of dried cranberries for a colour contrast...  -  09 Nov 2007  (Review from Allrecipes US | Canada)
