Spicy Stir-Fried Chicken

About this recipe: This spicy chicken and vegetable stir-fry takes less than 30 minutes to make - perfect for a midweek dinner.


Serves: 2 

  • 2 skinless, boneless chicken breast fillets, diced
  • 3 teaspoons chilli powder
  • salt and freshly ground black pepper to taste
  • 1 tablespoon olive oil
  • 1 green capsicum, seeds removed and chopped
  • 1 small onion, peeled and chopped
  • 1 or 2 green chillies, seeded and finely chopped
  • 1 large tomato, cut into chunks

  1. Season chicken with 1 teaspoon chilli powder, salt and pepper.
  2. Heat oil in a wok over medium high heat and stir-fry seasoned chicken for 3 to 4 minutes, or until tender. Remove from frying pan with a slotted spoon and keep warm.
  3. In same frying pan, stir fry green capsicum and onion until softened. Add green chillies, tomatoes and remaining chilli powder.
  4. Stir-fry for an additional 3 to 5 minutes; add chicken and stir-fry further 2 minutes.
