Kiddy cupcakes

    Make this easy recipe with your kids. Basic sponge bottom with chocolate and sweets on top. For younger kids bake the cakes yourself and then get them to decorate them. For adults put nicer decorations on the top!

    Serves: 24 

    • 185g self-raising flour
    • 185g margarine or butter
    • 3 eggs
    • 185g sugar
    • 200g chocolate
    • lollies to decorate the tops(Smarties, snakes etc)

    Prep:10min  ›  Cook:20min  ›  Ready in:30min 

    1. Preheat oven to 180 degrees C.
    2. Cream together the margarine and sugar till light and fluffy. Add the eggs one at a time, beating till smooth between each addition.
    3. Sieve flour and add gradually into mix.
    4. Using tea spoons place mixture in patty cups or greased muffin tins.
    5. Bake for 20 mins or until golden brown and skewer comes out clean.
    6. To decorate; melt chocolate -either in the microwave or in a bowl over simmering water. When melted drizzle the chocolate over the top and decorate with lollies.
    7. Leave to set. Enjoy!

    I made these last night and they turned out quite nice as I also added organic vanilla and a pinch of cinnamon. I'd also like to comment that they weren't as fluffy as to what I was hoping but shall definitely make them again and shall add maybe a level teaspoon of baking powder and bicarbonate of soda.
