    About this recipe: This is a chilli recipe loaded with vegetables. Garnish with sour cream and grated Cheddar cheese, if desired.

    Ingredients
    Serves: 6 

    • 2, 400g cans whole peeled tomatoes
    • 1, 400g can chickpeas, drained
    • 2 courgette, thinly sliced
    • 1 onion, peeled and chopped
    • 2 carrots, peeled and sliced
    • 2 stalks celery, sliced
    • 1 red capsicum, seeds removed and chopped
    • 1 teaspoon chilli powder
    • 1 green chilli, seeded and chopped
    • 2 cloves garlic, crushed
    • 1 tablespoon dried oregano
    • 2 teaspoons ground cumin
    • 1 teaspoon salt

    1. In a slow cooker, combine all ingredients. Cover and cook on low for 6 to 8 hours, or on high for 3 to 4 hours.
