Sticky Date Pudding with Caramel Sauce

About this recipe: Easy dessert pudding to make and it's delicious served drizzled with the caramel sauce and vanilla ice cream.


Serves: 8 

  • 450ml water
  • 275g dried pitted dates, chopped
  • 1 tsp bicarbonate of soda
  • 100g butter, softened
  • 275g caster sugar
  • 3 large eggs
  • 275g self-raising flour
  • 1 tsp vanilla essence
  • For the caramel sauce
  • 160g brown sugar
  • 250ml cream
  • 200g butter

  1. Preheat oven to 180 degrees C. Grease 20cm x 30cm rectangle baking dish.
  2. Bring water and dates to the boil in a medium saucepan. Stir in the bicarbonate of soda. Cool.
  3. Beat butter and sugar in a small bowl with electric beaters until light and fluffy. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla. Stir in the flour and the date mixture. Pour into dish; bake for 40 minutes.
  4. For the caramel sauce: combine the sugar, cream and butter in a saucepan; stir over a medium until smooth. Bring to the boil. Remove from the heat.
  5. Serve the pudding drizzled with the sauce.
