Basic Chocolate Cake

    This is my basic recipe for a simple chocolate birthday cake.

    Serves: 24 

    • 410g (3¼ cups) plain flour, sifted
    • 440g (2 cups) caster sugar
    • 3 tablespoons good quality cocoa powder
    • 2 teaspoons salt
    • 3 teaspoons bicarbonate of soda
    • 125ml (½ cup) vegetable oil
    • 20ml (1½ tablespoons) cider vinegar
    • 500ml (2 cups) water
    • 8ml (1½ teaspoons) vanilla essence

    Prep:15min  ›  Cook:40min  ›  Ready in:55min 

    1. Preheat oven to 180 C. Grease and flour a 23x30cm cake pan.
    2. In a large bowl, combine flour, sugar, cocoa, salt and bicarbonate of soda. Make a well in the centre, and pour in the oil, vinegar, water and vanilla essence.
    3. Mix well, then pour into the cake pan. Bake in preheated oven for 40 minutes, or until a skewer inserted into the centre comes out clean.

    This recipe dates back to the war/depression era, when eggs & dairy were rationed, or, in limited supply. The name of this recipe was plentiful back then. War Cake, Depression cake, Eggless butterless cake, Three hole chocolate cake, Chocolate oil cake, etc. Not once in that time was this recipe ever called, "Welfare cake" Re-naming this recipe Welfare cake is degrading to the many families & single mothers who have had to resort to welfare to get by. Being on welfare is embarrassing for a great many people. Having recipes labelled "welfare recipe" only adds to that embarrassment.  -  14 May 2012  (Review from Allrecipes US | Canada)
