Sausage and Tomato Casserole

    My mother's recipe. It's a simple bake dish, great for kids but I also love it! I like to serve it with good sundried tomato or olive bread. You can also use pepperoni or other sausage.

    Ingredients
    Serves: 4 

    • 250g cocktail sausages or skinny sausages
    • 1 kg potatoes, peeled and sliced to medium thickness
    • 2 onions, peeled and sliced into rings
    • 1 tin (400g) tomatoes diced or crushed
    • ground black pepper
    • grated parmesan cheese, for topping

    Directions
    Prep:30min  ›  Cook:45min  ›  Ready in:1hr15min 

    1. Preheat oven to 180 degrees C and grease a medium sized casserole dish.
    2. Line bottom and sides of dish with the sliced potatoes. Lay half the sausages (cut the thin sausages in half lengthways) on top, then a layer of onion rings, then cover with half tin tomatoes. Season with pepper.
    3. Place another layer of potato slices, sausages and onion rings over this then add the remaining tomatoes and season once again with pepper. Cover with a thin layer of potato slices, dot with butter and place in oven.
    4. Cook for 45mins to an hour until the potato topping is well browned. Serve topped with grated cheese.

    I followed this recipe and my potatoes were still raw after cooking for 60 minutes. Was i doing something wrong? If not then this recipe really doesn't work  -  29 Aug 2011  (Review from Allrecipes UK | Ireland)

    I made this for me, my brother and step-son last night and I was lovely! Although I forgot my brother hates tinned tomatoes but he still ate it all! I also added some red annd green pepper into it! Lovely recipe that I will be using again  -  11 Mar 2012  (Review from Allrecipes UK | Ireland)

    I also had the problem with the potatoes not cooking completely. Next time, I will give them a quick boil (5-10 min) before using them in this recipe.  -  02 Jul 2012  (Review from Allrecipes UK | Ireland)
