Lemon, Apricot and Poppy Seed Biscuits

About this recipe: This recipe allows you to adjust to your own tastes, and the lemon kick makes these cookies unique and refreshing.


Serves: 15 

  • 170g plain flour
  • ½ tsp baking powder
  • ½ tsp baking soda
  • 70g butter, softened
  • 65g caster sugar
  • 60g chopped dried apricots
  • 50g lemon curd
  • 1 tablespoon poppy seeds

  1. Preheat oven 200 degrees C. Lightly grease a baking tray.
  2. Sift the flour, baking powder and baking soda into a bowl. Add the butter and rub the mixture with your finger tips until the mixture resembles breadcrumbs.
  3. Mix in the chopped apricots, sugar, lemon curd and eggs until the mixture resembles soft dough.
  4. Make small balls about 2.5 cm wide and spread evenly on the baking sheet. Make sure to leave space so they can spread, and then press the tops to flatten slightly.
  5. Bake for 12-15 min, until they look golden. Remove from the tray and leave to cool on a wire rack and then repeat in batches until all of the dough is used up.
