About this recipe: Simple coconut macaroons; no separating eggs or whisking whites!! I've tried lots of recipes but find this gives the most moist and flavourful result! Use your choice of decorations - I like to use glace cherries and then, when they've cooled - drizzle melted choc on top.


Serves: 8 

  • 2 free range eggs,
  • 225g desiccated coconut
  • 150g caster sugar

Prep:15min  ›  Cook:30min  ›  Ready in:45min 

  1. Beat eggs well. Stir in coconut & sugar Leave mixture to stand for up to 20 minutes.
  2. Preheat oven to 180 degrees C. Line 1 or 2 baking trays with baking paper.
  3. Dip hands in cold water. Shape mixture into 16 pyramids, using your hands or an eggcup as a guide.
  4. Place on trays, decorate with glace cherries if desired.
  5. Bake in preheated oven for 25-30 mins or until golden.
  6. Remove from sheets and cool on a wire rack.
  7. If desired, drizzle dark melted choc on top, wait for it to harden, then drizzle with white melted choc. Store in an airtight container to retain moisture.
