Easy Microwave Sponge Pudding

    A very simple microwave sponge pudding that's ready in less than 15 minutes. It has a texture somewhere between a sponge and a steamed pudding. Flavour it by adding raspberry jam or golden syrup to the bottom of the microwave-safe bowl.

    Serves: 4 

    • 60g butter or margarine
    • 60g caster sugar
    • 60g self raising flour
    • 1 medium egg, beaten
    • 2 tablespoons milk
    • 2 tablespoons of jam or golden syrup

    1. In a medium bowl, cream together the butter and sugar until smooth. Mix in the egg and milk gradually, so as not to curdle the mixture. Sift in the flour, and fold in gently.
    2. Put 2 tablespoons of raspberry jam or golden syrup in bottom of microwave-safe bowl. Pour in the mixture.
    3. Cover, and cook for 3 minutes on full power, or until the pudding appears set when gently shaken and the top is sticky. Serve hot with custard or cream.

    There's no need to use cream method, just all-in mix. We prefer this to traditional pud as it's not so heavy and stodgy. Light and fluffy, delicious! I used light brown sugar.     this is gorgeous and so easy to make, a big hit with the whole family....... I made it in those small plastic individual pots u get ready made puds in (I save them) then turn them out into dishes & served with cream or custard .......
