Date crumble bars

    Serves: 24 

    • 150g chopped dates
    • 60ml cold water
    • 25g sugar
    • 1 teaspoon vanilla essence
    • 1½ cups (185g) self-raising flour
    • 150g butter or margarine
    • 100g rolled oats
    • 150g sugar

    1. Heat oven to 180 degrees C. Grease a large square tin.
    2. Place the dates, water, sugar and vanilla in a pot and heat gently until mixture forms paste. Add more water if required. Leave mixture to cool.
    3. Meanwhile, rub the margarine into the flour until it resembles breadcrumbs. Stir in oats and sugar and mix well.
    4. Place half the crumble mixture into the greased tray. Press down firmly. Smooth the date filling evenly all over but leave a small gap to the edge of tin.
    5. Spread remaining crumble evenly over the top.
    6. Bake for 40-45 minutes in preheated oven until golden brown.
    7. When cold cut into small squares.

    Really tasty, easy recipe. I love dates, so might increase the filling by 50% next time. Also, I added a pinch of salt to the crumble mix. Yummy! Would even be good in a big slab with custard- like school dinners  -  07 Mar 2013  (Review from Allrecipes UK | Ireland)

    I used this recipe, and I think 1 1/2 cups of flour to 150gm of butter was wrong. The crumble was too flourly... I think the recipe should read 50gm of flour!!  -  01 Apr 2012  (Review from Allrecipes AU | NZ)
