Custard squares

    These easy no-cook vanilla slices have a white chocolate topping and taste so good that I guarantee you will really like them! Make it a day ahead as it requires time to chill and set.

    Ingredients
    Serves: 30 

    • For the base
    • 250g crushed digestive biscuits
    • 250g dessicated coconut
    • 150g butter
    • 60g sugar
    • For the filling
    • 150g butter
    • 8 tablespoons custard powder
    • 115g icing sugar
    • 5 tablespoons of milk
    • For the topping
    • 250g white chocolate, melted
    • 3 tablespoons of cream optional

    Directions
    Prep:20min  ›  Cook:1hr  ›  Extra time:1day chilling  ›  Ready in:1day1hr20min 

    1. To make the base: Melt butter and sugar. Stir in crushed biscuits and coconut. Press into a lightly greased 30cm square tin. Chill for 1 hour.
    2. To make the filling: Blend butter, sugar, milk and custard powder. Spread over base and chill.
    3. To make the topping: Melt chocolate and cream together. Transfer into a clean sandwich bag and cut a small hole at the corner. Squeeze or drizzle it on top of the filling (any kind pattern that you want).
    4. Use a clean sharp knife to cut into 30 pieces. Do not take them out.
    5. Chill overnight. Allow to stand at room temperature for 30 min before serving.

    Did not like this at all. Far to much custard powder. Have searched internet and found that it should be 2 not 8 tablespoons of custard powder. I have since tried the altered one and it was lovely. Filling ingredients should be put in mixer and whisked like butter ice.  -  18 Feb 2010  (Review from Allrecipes UK | Ireland)

    I tried this recipe and it just tasted of pure custard powder nobody in my family liked it. I would of thought you would of have to cook the custard first other wise it would taste awful. What type of custard powder is it meant to be??  -  14 Oct 2009  (Review from Allrecipes UK | Ireland)

    Something else. I used a 23cmx23cm silicone square cake pan, and my white chocolate for the topping didn't melt properly, so I dropped it on in small clumps and spread it around a bit with a knife and then chilled it, and it set with a lovely chunky crunchy chocolate topping!
