    About this recipe: These easy no-cook vanilla slices have a white chocolate topping and taste so good that I guarantee you will really like them! Make it a day ahead as it requires time to chill and set.

    Serves: 30 

    • For the base
    • 250g crushed digestive biscuits
    • 250g dessicated coconut
    • 150g butter
    • 60g sugar
    • For the filling
    • 150g butter
    • 8 tablespoons custard powder
    • 115g icing sugar
    • 5 tablespoons of milk
    • For the topping
    • 250g white chocolate, melted
    • 3 tablespoons of cream optional

    1. To make the base: Melt butter and sugar. Stir in crushed biscuits and coconut. Press into a lightly greased 30cm square tin. Chill for 1 hour.
    2. To make the filling: Blend butter, sugar, milk and custard powder. Spread over base and chill.
    3. To make the topping: Melt chocolate and cream together. Transfer into a clean sandwich bag and cut a small hole at the corner. Squeeze or drizzle it on top of the filling (any kind pattern that you want).
    4. Use a clean sharp knife to cut into 30 pieces. Do not take them out.
    5. Chill overnight. Allow to stand at room temperature for 30 min before serving.
