    About this recipe: Similar to scones, these might look like little rocks but certainly don't taste like them. This makes quite a big batch so you might want to halve the recipe or freeze some of them!

    Serves: 20 

    • 250g butter
    • 250g caster sugar
    • 1kg plain flour
    • 3 tablespoons baking powder
    • 50ml milk
    • 3 eggs
    • 500ml water
    • 1 teaspoon of finely grated orange or lemon rind
    • 300g sultanas (or mixed peel)

    1. Preheat oven to 200 degrees C. Grease 2 large baking trays
    2. Cream butter and sugar together with an electric mixer. Add flour and baking powder; mix in well.
    3. Add milk, egg, water and lemon zest; continue to mix well. Add sultanas or mixed peel; mix well.
    4. Dollop even portions of dough (not too closely together) on greased baking trays.
    5. Bake for 15 minutes or until cooked through. Break one in half to see if it's no longer doughy.
    6. Cool on wire rack and serve warm.
