About this recipe: What are stovies? Stovies are traditionally made with leftover roast beef, potatoes and onions, kind of like a soupy stew. This recipe uses corned beef but you can adapt anything to it.


Serves: 4 

  • 6 large potatoes
  • 300ml milk
  • 2 small or 1 large onion
  • 1 - 2 tablespoons of butter
  • 200g corned beef, tinned or leftover roast beef

  1. Peel potatoes and cut into small cubes. Place in a medium-sized pot and cover with milk. Heat until boiling then bring to a simmer.
  2. While potatoes are simmering...chop onion roughly and fry in butter until brown and crispy.
  3. Slice corned beef into medium chunks.
  4. Set aside until milk and potatoes cook down into a kind of starchy soup, but with soft lumps of potato still.
  5. Mix in onion and corned beef, allowing all flavours to mix.
  6. Season with salt and pepper.
