    About this recipe: Great comfort food! A savoury bread pudding made with eggs and cheese. Ideal as a light evening meal, or even a breakfast with a difference! Optional: Add grilled chopped bacon, mushrooms, ham, tomato or anything else you can think of!

    Ingredients
    Serves: 2 

    • 4 slices white bread
    • 2 slices strong Cheddar cheese
    • 2 eggs, beaten
    • 30ml milk
    • Salt and pepper
    • 2 tablespoons grated cheese of your choice.

    Directions

    1. Preheat oven to 180C.
    2. Make 2 Cheddar cheese sandwiches and cut each sandwich into 4 triangles.
    3. Arrange sandwiches in a lightly greased oven-proof dish.
    4. Beat eggs, add the milk and season with some salt and pepper.
    5. Pour egg and milk mixture evenly over the sandwiches.
    6. Vary amounts if needed, but the sandwiches do not need to be totally covered in egg, but the egg should soak in and leave a little in the bottom of dish.
    7. Sprinkle grated cheese on top.
    8. Bake for 20-30 minutes, checking frequently to avoid burnt edges. It should rise quite a bit and is a very nice light dish.

    Little too heavy on the parmesan cheese for us, would definately add more egg mixture and put the sandwich pieces tight together in a smaller pan.  -  29 Jan 2002  (Review from Allrecipes US | Canada)

    Good base recipe. My family suggested adding onions, red peppers, and sausage or ham. I think I would also increase the egg/milk mixture by half next time. This was so dry we picked it up and ate it with our fingers.  -  16 Sep 2006  (Review from Allrecipes US | Canada)
