    About this recipe: This is a very nice, soft bread to have as toast for your breakfast or enjoy with a cup of tea. It also smells fantastic while it is baking.

    Ingredients
    Serves: 12 

    • 90g sultanas, chopped
    • 30g dried apricots, chopped
    • 1 orange, grate the rind
    • 2 tablespoons orange juice
    • 125g caster sugar
    • 45g butter
    • 1 egg, beaten slightly
    • 250g self-raising flour
    • 180ml milk

    Directions
    Prep:15min  ›  Cook:40min  ›  Ready in:55min 

    1. Preheat oven to 180C.
    2. Lightly grease a 23x12 cm loaf tin.
    3. In a small bowl, combine sultanas, apricots, orange rind and orange juice. Let stand for 10 minutes.
    4. In a large bowl, cream butter and sugar together. Beat in egg. Stir in fruit. Stir in flour alternately with milk. Pour mixture into the prepared tin.
    5. Bake in preheated oven for 40 to 45 minutes, or until a skewer inserted into centre of loaf comes out clean.
    6. Serve sliced and buttered with a pot of tea.

    A Enjoyed this bread very much. It had great flavor. I made it exactly as the recipe called for. The only thing I'll do differently next time is add more apricots. And thats only because I prefer more fruit in my fruit breads.  -  15 Jan 2003  (Review from Allrecipes US | Canada)
