This a variation on Phad phet which has fresh bamboo shoots and gai ban, or "house chicken" a fuller flavoured free range chicken. Regular chicken can be substituted.
Made this today as I was craving it. Didn't quite like it done this way so I changed the recipe a little bit. In place of soy I used fish sauce 1 can of red curry paste, bone in chicken, bamboo shoots and sweet basil. Turned out delicious. Fallow the same inspructions. - 24 Feb 2017
