Peel the bamboo shoot and shred. Rub the salt into the shredded bamboo.
Heat a wok and add the curry paste. Fry slightly and add the chicken and mix the chicken in until the curry paste is fragrant. Add the bamboo, grachai and oyster sauce and stir fry until well mixed. Add the water and cook until the chicken is done. Add the basil last and wilt. Serve.
