Phad phet nomai gai ban (spicy stir fry with bamboo and chicken)

    This a variation on Phad phet which has fresh bamboo shoots and gai ban, or "house chicken" a fuller flavoured free range chicken. Regular chicken can be substituted.

    Serves: 4 

    • 200 grams fresh bamboo shoot
    • 2 tablespoons salt
    • 3 Tablespoons red curry paste
    • 300 grams free range chicken with bones, chopped into pieces
    • 1 cup grachai, cut into thin strips
    • 1/4 cup (60ml) oyster sauce
    • 1/2 cup (125ml) water
    • 1 handful sweet basil

    1. Peel the bamboo shoot and shred. Rub the salt into the shredded bamboo.
    2. Heat a wok and add the curry paste. Fry slightly and add the chicken and mix the chicken in until the curry paste is fragrant. Add the bamboo, grachai and oyster sauce and stir fry until well mixed. Add the water and cook until the chicken is done. Add the basil last and wilt. Serve.

    Made this today as I was craving it. Didn't quite like it done this way so I changed the recipe a little bit. In place of soy I used fish sauce 1 can of red curry paste, bone in chicken, bamboo shoots and sweet basil. Turned out delicious. Fallow the same inspructions.  -  24 Feb 2017
