Crispy pork belly stir fried with Chinese mustard

    This is an easy side dish to prepare. I usually go out to a roast pork/duck seller to get the crispy pork belly premade.

    Serves: 4 

    • 300g crispy pork belly, cut into bite sized chunks
    • 1 bunch Chinese mustard greens
    • 5 cloves garlic
    • 5 each Thai chillies
    • 3 Tablespoons oyster sauce
    • 2 tablespoons light soy sauce
    • 1 Tablespoon fish sauce
    • 1 tablespoon caster sugar
    • 1/2 cup water
    • 2 tablespoons vegetable oil for stir frying

    1. Smash the garlic and chillies in a mortar and pestle until minced in appearance.
    2. Heat a wok to high heat and fry the garlic and chillies in the oil until almost crispy. Add the greens, oyster, soya, fish sauce, sugar and water. Cover and cook the until the greens are wilted. Add the belly and mix into the greens.
    3. Taste, adjust and serve.
