Iced Pineapple simmered in Syrup

    This is a simple and light dish to have after a heavy meal.

    Serves: 4 

    • 1 small, 1/2 kg pineapple, peeled and sliced into triangles
    • 1 cup caster sugar
    • 3 cups (750ml) water
    • 1 kg ice

    1. Heat the sugar and water in a sauce pan. Add the pineapple and simmer until the pineapple is cooked through, about 10-15 minutes. Cool to room temperature.
    2. Place the pineapple in an individual bowl with a bit of syrup and add a couple spoonfuls of ice. Serve.


    If the liquid is too syrupy, then add a bit of water, but remember the ice will dilute the syrup slightly.
