Chili-Lime Sauce for Seafood

About this recipe: This sauce is the most delicious, most fitting accompaniment to grilled or steamed mussels, shrimp, fish, lobster, or whatever other seafood the ocean gifts us! On a sunny evening by the beach, with friends and family, and a cold beer, this is the best combination of flavours I can think of.

Makes: 1 /2 cup

  • 1/4 cup lime juice
  • 3 tablespoons fish sauce
  • 2 teaspoons sugar
  • 3-4 cloves garlic, cut into small pieces
  • 3-4 bird eye chillies (optional)
  • 3-4 kaffir lime leaves, sliced into very, very thin strips

  1. In a mortar grind the garlic with a sprinkle of salt to a paste. Add the chillies, if using, and mash them to a coarse paste.
  2. Add the sugar, lime juice and fish sauce. Stir everything together and taste. It should be sour, salty, and sweet, in that order. There should be good heat from the chillies. Adjust seasoning, if needed.
  3. Add the kaffir lime leaves and pour into a serving bowl.
