About this recipe:This typical breakfast dish is very fast to prepare and a good source of protein in the morning. We eat this omelet with plain rice porridge for a healthy, satisfying start to our day. (Of course it is perfectly acceptable and normal to eat this dish for dinner as well.)
couple splashes of Maggi seasoning sauce, fish sauce or salt
1 splash of water
1 tablespoon vegetable oil

In a small bowl combine all the ingredients except for the oil. Stir with chopsticks or a fork to scramble everything well.
In a wok or a frying pan heat the oil over high heat. Pour the egg mixture in. If the oil is properly hot it will splatter a bit and the eggs will start to puff up. Use a utensil to scramble the eggs in the middle a little bit to help cook the omelet faster.
After a minute or two, when the bottom side is golden brown, turn the omelet and let the other side brown too.
Serve cut up or not with a few other dishes and a steaming hot bowl of rice porridge.
