Ikan Bakar (Grilled Fish in Banana Leaf)

About this recipe: A simple grilled fish recipe that is tasty and moist. Delicious to have on its own with air assam dipping sauce (see recipe) or serve with rice.

Serves: 4 

  • 1 large whole fish, choose herring, mackerel or sting ray.
  • 1 tbsp turmeric powder
  • 2 tsp salt
  • large banana leaf, cut to size
  • toothpicks

Prep:5min  ›  Cook:45min  ›  Ready in:50min 

  1. Clean fish and remove scales. Score both sides with 3 diagonal slashes (except sting ray).
  2. Rub the whole fish with turmeric powder and salt. Place on a sheet of banana leaf and wrap it like a parcel, securing the ends with toothpicks (or staple the ends).
  3. Depending on the size of the fish, grill on low heat for about 30 minutes on both sides until cooked.
  4. Unwrap the parcel and serve the fish with air assam dipping sauce (see recipe).
