About this recipe: This sour spicy dipping sauce is a great accompaniment to grilled fish or meat.

Serves: 8 

  • 3 fresh red chillies
  • 3 cm belacan, roasted
  • 1 tsp salt
  • 1/4 cup tamarind juice
  • 5 shallots, sliced thinly
  • 4 bird's eye chillies, coarsely chopped
  • 1 tsp kicap manis (thick sweet soy sauce)
  • sugar to taste
  • water

Prep:5min  ›  Cook:10min  ›  Ready in:15min 

  1. Pound the fresh chillies with the belacan in mortar and pestle to medium coarseness. Add the kicap manis, tamarind juice, salt and sugar and mix. Add the sliced shallots and chopped chillies. Taste and adjust the seasoning. Add more water if the mixture is too thick and sour.
