    About this recipe: My friend's mother-in-law passed this recipe to her and I tried this at her house. There's a slight sweetness from the prawns, a ginger-y freshness and it's delicious with rice.

    Ingredients
    Serves: 4 

    • 300 gm prawns
    • 1 1/2 tbsp Shaoxing wine
    • 3 cm ginger, minced
    • 2 garlic cloves, minced
    • 1 tsp oyster sauce
    • 1 tsp soy sauce
    • 2 tsp tomato sauce
    • 1 tsp chilli sauce
    • 1 egg white, beaten
    • salt and pepper to taste
    • oil for cooking

    1. Devein the prawns but leave the shells on. Marinate the prawns with some salt, pepper and Shaoxing wine for about 15 minutes.
    2. Heat a little oil in pan and stir-fry some ginger and garlic until fragrant. Add the oyster sauce, soy sauce, tomato sauce and chilli sauce and stir well.
    3. Drain the prawns of the marinade. Add to the pan and mix well with the sauce. Then add the egg whites and stir-fry quickly until prawns are cooked. Serve.
