    About this recipe: This soup is easy and healthy. Great to have when you're feeling under the weather. The ribs are tender and fall off the bones.

    • 500 gm pork spare ribs, cut into pieces
    • 1 small lotus root
    • 2 pieces dried squid
    • 100 gm raw peanuts
    • 15 chinese red dates
    • salt to taste
    • soy sauce
    • white pepper
    • water

    1. Soak the dried squid, peanuts separately in bowls of water for about 1 hour.
    2. Peel the lotus root and slice to medium thickness.
    3. Drain the soaked ingredients and put all ingredients except seasonings into a soup pot. Fill the pot with water and cook on medium heat for 2 1/2 hours.
    4. Add salt at the end of cooking time. Serve soup in bowl and have soy sauce and white pepper as additional condiments on the side.
