Pork Sparerib and Lotus Root Soup
This soup is easy and healthy. Great to have when you're feeling under the weather. The ribs are tender and fall off the bones.

500 gm pork spare ribs, cut into pieces
1 small lotus root
2 pieces dried squid
100 gm raw peanuts
15 chinese red dates
salt to taste
- Soak the dried squid, peanuts separately in bowls of water for about 1 hour.
- Peel the lotus root and slice to medium thickness.
- Drain the soaked ingredients and put all ingredients except seasonings into a soup pot. Fill the pot with water and cook on medium heat for 2 1/2 hours.
- Add salt at the end of cooking time. Serve soup in bowl and have soy sauce and white pepper as additional condiments on the side.
