Kacang Buncis Goreng Telur (Green beans with scrambled eggs)

    An easy side dish to use up your leftover beans.

    Ingredients
    Serves: 4 

    • 200 gm green beans
    • 5 shallots, sliced
    • 2 garlic , minced
    • 2 tsp soy sauce
    • 2 eggs
    • salt and pepper
    • 1/2 red chilli, sliced diagonally (optional)
    • oil for cooking

    1. Clean beans and slice diagonally into 6 cm length.
    2. Beat eggs with soy sauce, salt and pepper. Do not add salt if the soy sauce is salty.
    3. Heat oil wok and stir-fry the shallots and garlic until fragrant. Add the beans and sliced red chillies and stir.
    4. Pour in the egg mixture and scramble all the ingredients quickly. Cook until the egg is medium soft or according to your taste.

    This was OK. The green beans over powered the eggs. I think it would be better with 100g green beans and 3 eggs with 3 teaspoons of soy sauce.  -  24 May 2013  (Review from Allrecipes AU | NZ)
