    About this recipe: This is my version - rice is mixed with soya sauce, egg, ginger and spring onions.

    Serves: 4 

    • 2/3 cup raw instant rice
    • 1 tablespoon (15ml) sesame oil
    • soy sauce to taste
    • 2 eggs, beaten
    • 1 teaspoon finely chopped fresh ginger
    • 4 spring onions, finely chopped

    1. Follow instructions for rice on package. Bring water to a boil in a medium saucepan. Stir in rice and cover. Remove from heat and let stand 5 minutes. Fluff with a fork and drain any excess water.
    2. Heat oil in a large frying pan over medium heat. Stir in rice and soy sauce. Heat briefly then transfer rice to a bowl.
    3. Scramble the eggs in the same frying pan, then stir in rice. Stir in ginger and spring onions, heat through and serve.
