Spicy Avocado and Lime Vinaigrette

    This is a quick and tasty dressing for salad, it goes great with grilled chicken and romaine lettuce or pecans and lentils.

    Makes: 4 servings

    • 1 avocado - peeled, pitted, and cubed
    • 2 tablespoons key lime juice
    • 1 dash hot pepper sauce
    • 3 tablespoons seasoned rice vinegar

    1. Whisk together the avocado, lime juice, hot pepper sauce, and vinegar until smooth. Set aside at room temperature for 29 minutes. Use as a dressing for salad.

    This dressing was my finishing touch on a salad with lettuce, spinach, peppers and "Beer Lime Grilled Chicken", also on this site. The flavors were very nice and complimented the chicken well. The dressing comes out creamy and tangy, with a nice hit of heat on the end.
