Spiced Balsamic Vinaigrette

    Cumin and crushed red pepper flakes add a kick to traditional balsamic vinaigrette dressing.

    Makes: 4 servings

    • 45 ml balsamic vinegar
    • 1/2 teaspoon Dijon mustard
    • 1 shallot, minced
    • 2 cloves garlic, pressed
    • 1/4 teaspoon ground cumin
    • 1/4 teaspoon crushed red pepper flakes
    • 80 ml olive oil
    • 1 pinch salt and ground black pepper to taste

    1. Whisk the balsamic vinegar and Dijon mustard together in a small bowl. Whisk in the shallot, garlic, cumin, and crushed red pepper. Slowly drizzle in the olive oil, whisking constantly until fully incorporated, and continue to whisk for an additional 1 to 2 minutes. Season to taste with salt and black pepper. Let the dressing sit for 10 minutes to allow the flavor to develop.

    Fabulous dressing that definitely adds a kick to traditional balsamic vinaigrette! I used 1/4 c. balsamic and dried minced onion vs. shallot. It was perfect over mixed greens and fresh ripe tomatoes.     Very yummy dressing! Had to leave out the shallot as I didn't have any, so used some dried onion instead.     Really great. It's 100 degrees in Los Angeles today and I've got nothing in the house. I decide to make a pasta salad with canned tuna, frozen peas, a mixture of 4 Italian grated cheeses and now I want I want an interesting vinigrette because I'm out of bottled dressing.
