    About this recipe: These are Sister Rachel's Spice Bars. If you like yummy, spicy, chewy cookie bars, you'll love these!

    Ingredients
    Makes: 30 

    • 155 g shortening
    • 150 g white sugar
    • 60 ml honey
    • 60 ml molasses
    • 2 teaspoons baking soda
    • 1 teaspoon ground cinnamon
    • 1 teaspoon ground ginger
    • 1/2 teaspoon ground cloves
    • 310 g all-purpose flour
    • 125 g raisins
    • 120 g confectioners' sugar
    • 3 tablespoons milk
    • 1/2 teaspoon vanilla extract

    Directions
    Prep:15min  ›  Cook:20min  ›  Ready in:35min 

    1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x 13 inch baking dish.
    2. In a medium bowl, cream the white sugar and shortening together. Stir in the molasses and honey. Sift together the flour, baking soda, cinnamon, ginger, and cloves; add to the creamed mixture and mix until well blended. Finally, stir in the raisins.
    3. Press the batter evenly into the prepared baking pan. Bake for 15 to 20minutes in the preheated oven, bars should turn golden brown. Top will appear smooth and dry to the touch.
    4. Meanwhile ... make the icing. In a smaller bowl, stir the confectioners' sugar together with the milk and vanilla. Drizzle over the spice bars while they are still warm. Allow cookies to cool before cutting.

    If you like a good, spicy cookie, this is the one. Even after adjusting the spices (1 teas. cinnamon, 1/2 teas. ginger, 1/4 teas. cloves), it is still plenty spicy. I did find the dough too dry and added 1 egg to the mixture. Baked 17 minutes and they are moist and chewy.  -  23 Jan 2007  (Review from Allrecipes US | Canada)

    I think the trick with these is not to overbake. My first batch were bricks but since the flavor was great I tried again and simply watched them more closely in the oven. So without altering the ingredients they turned out great after 18 minutes of baking. (Probably could have gone 20 but I was nervous, hee hee.) Very tasty.     These are absolutely delicious -- I went on a cookie-making binge and tried over 25 different cookie recipes; this one was among my very favorites. Soft, sweet, and unusually flavored.
