Red Raspberry Vinaigrette

    A very easy, flavor-filled dressing that goes with any kind of salad. Only three ingredients! I like to use it with romaine, feta, toasted pecans, bacon, and red onion.

    Serves: 2 

    • 60 ml olive oil
    • 235 ml seasoned rice vinegar
    • 280 g seedless raspberry jam

    1. Combine the olive oil, rice vinegar and raspberry jam in the container of a blender. Process until smooth. Store in a jar in the refrigerator.

    I've looked awhile for a good raspberry vinaigrette and this is delicious. It has so much flavor for only 3 ingredients.
