    My mother's version of the classic - perfect for canapes at a cocktail party, and children love them! Fast, easy and absolutely delicious.

    Makes: 60 

    • 8 slices bacon
    • 225 g aged Cheddar cheese, cubed
    • 1 onion, cut into chunks
    • 2 teaspoons mayonnaise
    • 1 teaspoon dry mustard powder
    • 60 slices sandwich bread, cut into rounds

    1. Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
    2. Place the bacon, Cheddar cheese, onion, mayonnaise, and mustard into the bowl of a food processor; process until well blended. Scoop into a container, cover, and refrigerate several hours to overnight to allow the flavors to blend.
    3. Adjust oven rack to the topmost position, and set oven to Broil.
    4. Spread the bread rounds evenly with cheese mixture and place onto a cookie sheet. Toast under the broiler until browned and puffed, 5 to 8 minutes. Serve immediately.

    Wow I really hate to do this but, I made this for the Super Bowl and it was so wrong. The cook time is way off. I only had these under the broiler for about a minute maybe less. You can see from the photo that I posted that they would have been inedible after 8 minutes or even 5. The spread was okay but you need to take it out of the refrigerator to warm up and become spreadable as it will completely tear the bread if used while cold. The underside of the bread was completely soggy and unappetizing. In my opinion you should toast one side of the bread then put the spread on the untoasted side prior to putting these under the broiler.  -  03 Feb 2013  (Review from Allrecipes US | Canada)
